Hamburger Noodle Soup
On a cold rainy day I decided it would be incredibly comforting to have soup and grilled cheese for lunch. My toddler was so excited he couldn’t wait for me to take a photo. Look at that cute little hand!
How this soup came about was like magic - I had ground beef, some veggies, and noodles. The slow cooker was calling to me and I knew it could do wonders with the flavors I had in mind. I started with browning the beef, threw in the vegetables haphazardly as I chopped them. I went heavy on the veggies and decided to chop up half a jalapeno - it added just the tiniest bit of heat and depth to the soup, but didn’t make it spicy at all - my 11 month year old can attest to that. I love that my slow cooker has a saute function so I don’t have to dirty a separate pan, but if your slow cooker doesn’t have that function, use a pan over medium heat with a little bit of olive oil in it. In three hours I had one of the best soups of my life. It was even better the next day as leftovers.
Hamburger Noodle Soup Ingredients
Ground Beef
Onion
Green Bell Pepper
Jalapeno
Carrots
Can Diced Tomatoes
Beef Broth
Poultry Seasoning - this is key. I don’t like putting ingredients in that you may not have on hand, but I find poultry seasoning adds depth to certain dishes, ironically ones with beef. This is the seasoning I have.
Garlic Powder
Paprika
Oregano
Pasta - elbow, dinosaur shaped, alphabet - you pick!
Hamburger Noodle Soup
Ingredients
- 1 lb ground beef
- 1 onion, diced
- 1 green bell pepper, diced
- 1/2 - 1 jalapeno, seeds and ribs removed and diced
- 3-4 carrots, peeled and diced
- 4-6 cups beef broth - depends on how brothy you want your soup
- 14 oz can diced tomatoes
- 2 tsp poultry seasoning
- 2 tsp garlic powder
- 1 tsp paprika
- 1 tsp oregano
- 1 cup pasta
- salt and pepper to taste
Instructions
- Heat a small amount of oil in pan (or in slow cooker on saute setting). Add ground beef and break up meat. Sprinkle with kosher salt.
- While ground beef browns, prepare your veggies. Dice onion, bell pepper, jalapeno, peel and dice carrots. Throw veggies in pan with ground beef as you go.
- Once ground beef is browned, drain off any excess oil.
- Add ground beef and veggies to slow cooker. Add all seasonings and mix. Add can of tomatoes, add broth. Seasoning with salt and pepper. I used about 1 tsp of kosher salt and added more to taste once the soup was done.
- Turn slow cooker to high and cook for 2-3 hours. Add pasta in during the last 15-20 minutes of cooking and cook until pasta is tender.
