Easy and Tasty Steak and Grilled Vegetables

I used to be a skeptic when it came to making recipes with pre-packaged ingredients. In fact, my old self would even say it isn’t a “recipe” if there are pre-made ingredients in it. My old self would say “Girl, why you taking the easy way out? Make that teriyaki sauce yourself. Get in the kitchen.”

Well, my old self didn’t have kids.

Now a days, especially since going back to work, quick and easy is priority number one, but of course without sacrificing the other priority number one - taste. Yes, I have TWO priority number ones. This recipe makes that statement less illogical.

Quick and Easy Steak Dinner

This grilled steak and vegetable dinner is quick, easy, tasty and a crowd pleaser. It’s perfect for after a pool day. Marinate your meat and veggies in the morning and then get someone else to handle the grilling and you’ve got yourself a night off from cooking. But still take all that credit for having the idea and doing the prep work. Win. Win.

GRILLED TERIYAKI STEAK & VEGGIES

GRILLED TERIYAKI STEAK & VEGGIES

Meat. Veggies. Bottle of Sauce. That's it to grilled steak and veggie heaven. Get on it.
Prep time: 10 MinCook time: 15 MinTotal time: 25 Min

Ingredients:

  • 1 bottle Soy Vay Veri Veri Teriyaki or Trader Joe’s Soyaki Sauce
  • 2-3 lbs skirt steak / flank steak / flap steak
  • Veggies of your choice like: zucchini, bell pepper, portobello mushroom caps, onions, spring onions.
  • salt

Instructions:

  1. One to eight hours before grill time, throw steak in a plastic bag with half a bottle of the teriyaki sauce. Seal and put in fridge. 
  2. Slice veggies large so they don’t fall in the grill grates. Zucchini’s I sliced vertically. Bell peppers I cut into quartered sections. I  kept the mushroom caps whole and just scraped off the gills with a spoon. Onions I cut into thick onion rings.
  3. Add cut veggies to bag and add remainder of sauce. You can do this a couple hours before grill time or 10 minutes before. The longer they marinade the stronger the flavor.
  4. Start with the veggies on the grill first. Sprinkle lightly with salt. Watch carefully so they don’t burn. Your zucchini and peppers will cook the fastest. For extra flavor, you can also baste them with some sauce from the bag.
  5. Remove veggies, unless you have a huge grill and have room for the meat without removing the veggies, and cook steak to desired temperature. Timing varies based on thickness of your steak.

Notes:

TIP: take meat and veggies out of fridge one hour before grilling to bring it to room temperature, this will help with more even cooking.
